Kimchi Cheesesteak Sandwiches

Thanks to my girls (and BTS), we are all about Korean food lately.  Last week at the mall we passed by a cheesesteak place and saw their new kimchi cheesesteaks. Because we eat only halal, we didn’t try it, but decided to make it at home.

No exaggeration, these sandwiches came out SO good! I think marinating the meat with a sweet and spicy bulgogi mixture made all the difference. Just look at this video! Recipe below, enjoy :)

 Ingredients:

  • 1.5 lbs thinly cut beef strips
  • 1/4 cup soy sauce
  • 3 tbsp gochujang
  • 1 tbsp red chili pepper flakes
  • 1/2 tsp black pepper
  • 1/2 tsp gochugaru (optional)
  • salt to taste
  • 3 tbsp honey or brown sugar
  • 2 tbsp sesame oil
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • ketchup 
  • mayo
  • 1 bell pepper
  • 1 large onion
  • 1.5 cups kimchi
  • cheese (american or provolone slices)
  • 2 tbsp cooking oil
  • bread rolls

    1. Wash and toss the thinly sliced beef in a big bowl or sandwich bag
    2. Add in soy sauce, gochujang, pepper, salt, pepper flakes, garlic, ginger, honey, and sesame oil to the beef and stir well. Tip: add a little baking soda to make the meat a bit more tender. Let beef marinate for at least 2 hours
    3. Add oil to pan and cook meat until almost cooked, about 4-5 minutes.
    4. Slice bell peppers and onions and add them to the beef. Stir and cook for a few minutes.
    5. Once the water has evaporated, add in the kimchi. Cook for another few minutes. 
    6. When done, layer the cheese slices on top to melt. 
    7. Toast the bread.
    8. Add meat to the bread and top it with a little mayo and extra gochujang or ketchup if you’d like.
